I drink a lot of smoothies! I literally have two a day, one for breakfast and one for lunch. 

Here are some recipes that I found on Green Plate Rule

Coconut Almond Protein Smoothie

Serves: 1
A filling smoothie that is low in sugar (11 grams) and high in protein (13 grams) and fiber (15 grams).
Ingredients
  • 1 cup unsweetened Coconut Milk
  • 2 tbsp natural Almond Butter
  • 2 tbsp shredded organic coconut

Strawberry Banana Smoothie

Ingredients
  • 3/4 cup unsweetened non-dairy milk
  • 1 frozen banana
  • 5 large strawberries
  • 2 tsp honey or agave (I prefer raw honey)
  • 1/2 tsp vanilla extract
Instructions
  1. Add all the ingredients to a blender
  2. Start on low speed and slowly increase to high
  3. Blend until smooth, about 1 minute
  • 1/2 frozen banana
  • 1 tbsp chocolate protein powder (I use Amazing Grass Amazing Meal Chocolate Protein Powder)
  • 1 tbsp chia seeds
  • 2 ice cubes
Instructions
  1. Add all the ingredients to the blender
  2. Start on a low speed, slowly increasing to high
  3. Blend until smooth, about 1 minute
 
Notes

I did not add any sweetener but if needed you could add 1 – 2 tsp of honey or agave.

 

 

eating clean

I recently went to Kristie Rosser, a fantastic NP who specializes in ‘optimal living’. I have learned so much from the great books I have read and from the research I have done. Here is what I have learned about eating clean:

  1. Eat lots of plants – eat foods off a tree, bush, plant or vine
  2. Enjoy grains – eat grains that are still complete
  3. Read labels
  4. Eat 5-6 small meals per day (eating often keeps your metabolism running strong!)

 

Justin Hackworth

Because I teach online, I needed some good head-shots. I have been using one that was taken at a Supercross race (not the most professional). So, I scheduled an appointment with Justin Hackworth (a genius) and got some pictures taken. 

Despite the fact that I have gained a LOT of weight because of some health issues, I still think he did an amazing job.

sad

i have been feeling a little sad lately. not sure why, probably the combination of the cold weather, being so busy with work, school, kids, house, etc. 

today i just needed some inspiration and found this:

front room

the front room has been such a challenge for me. i could not decide what i wanted to do! i found an old door, painted this gorgeous turquoise color and leaned it up against the wall. then i found this amazing wreath (it’s made from pages of a book!) and placed it on the door. it is gorgeous. one of the favorite parts of my house! ImageImage

kitchen

the kitchen is still a work in progress. at first i was going with red, but i am so sick of dark colors that i changed my mind and went with yellow. i found this adorable painting and am basing the kitchen decorating off of it. i found a cute tin that is shaped like a pear, found some fake bright yellow pears and a vintage pitcher. instant center piece! then i found this awesome side table that fits perfectly underneath the picture. i am just waiting for the curtains to come and then i can post the final result. ImageImageImage

I found the table at an antique store near my home. The lid lifts like a piano bench. The chair I found on the side of the street, literally! I brought it home and painted the seat part turquoise to match the table, then painted over that with white. Then I pulled out the sand paper and distressed it. This was my first double layer paint job and I think it turned out pretty great!
